NUTRITION OF THAN STICKY RICE
Than sticky rice is a healthy food. It is also known as black sticky rice, which is a whole-grain, unpolished white variety of traditional sticky rice, often served in Asian, especially Thai, restaurants. Despite its name, the color of rice is close to dark and rich purple. Like white rice, black sticky rice has sticky grains and can be used in sweet and savory Asian dishes. Than sticky rice can be purchased at Asian grocery stores, and at natural or health food stores.

HEALTH BENEFITS OF THAN STICKY RICE
The ancient Chinese believed that eating it helped improve the kidneys, stomach and liver, so it became a favorite of the aristocracy. For centuries, sticky rice with charcoal has been recommended for the following reasons:
Nutritious
The characteristic color of this rice comes from anthocyanin, the same plant pigment that gives blueberries their rich color. Anthocyanin is a powerful antioxidant that has many benefits for the heart and brain. Compared to white rice, sticky rice also has more protein and phytochemicals.
Less sugar
This rice is considered low in sugar. For this reason, it is considered a healthier choice for diabetics.
Lots of fiber
Fiber performs many different roles in the body. The digestive system cannot digest it completely, so it becomes food for friendly bacteria in the intestines. It also slows the metabolism of sugar, preventing blood sugar spikes that cause type 2 diabetes. It also helps people feel fuller longer. That's why charcoal sticky rice helps support weight loss. In a study, published in the journal Food Medicine, conducted on animals, researchers demonstrated that this rice supplement can inhibit fat accumulation in the liver. Thereby, researchers concluded that charcoal sticky rice has anti-obesity effects because it has the ability to reduce the accumulation and promote the decomposition of fat. Black Sticky Rice is quite rare in Vietnam, so the price is much higher than other types of sticky rice and is a healthy food favored by many people.
HOW TO COOK CHARCOAL STICKIN IN A RICE COOKER
Ingredient:
1 cup black rice
1 and 3/4 cups of water or filtered water plus more water for rinsing
Salt to taste
Instruct:
Prepare rice:
Place the rice in a large bowl – preferably metal or glass so it doesn't stain. Add warm water until the rice is completely submerged, use your hands to mix and stir the rice well. You will notice the water quickly takes on a dark purple color.
Strain the water out of the bowl – I recommend using a mesh sieve so you don't lose the rice grains. Repeat this process 4 more times (yes, 4) fill the bowl with water, stir the rice well and strain out the water. This is important to remove excess starch from black rice so that it cooks properly in the rice cooker.
Drain the rice and add it to your rice cooker. Add water or water at a ratio of 1 and 3/4 cups for each cup of black rice.
If your rice cooker has a brown rice mode, start it. If not, set the timer to 25 minutes.
When the timer goes off, remove the lid to let excess steam escape.
Cooked black rice can be stored in the refrigerator for up to 5-7 days.
